How do I convert a certain time (ex. 2.14pm, 9.12am, etc.) to just minutes, so I can calculate with it?

Excel keeps track of time as a fraction of a day. There are 1440 minutes in a day, so, for example, if cell A1 has the time 2:14pm (as Excel time, not text), then A1*1440 will give you how many minutes into the day have occurred. If A1 has one time and B1 has a later time then (B1A1)*1440 will tell you how many minutes are between the two times.

If you are working with time from a single cell only, be a bit careful. A hh:mm format will indicae only the fractional part of the DATE stored in the cell. That is, 0.24 an 1.24 and 18,000.24 will all display the same. To make sure you are getting only the fractional part (if that is what you want) use:
=1440*mod(A1,1)
If you are calculating the elapsed time in minutes between two dates, then Derk's (B1A1)*1440 is right on target.
